Sous Vide Steak (steam oven).

One of the many great things about the Wolf steam oven is that it can Sous Vide. If you are not familiar with this fancy method of cooking, you are not alone. Essentially, “sous viding” is cooking food in a vacuum sealed bag, in water, at a low temperature, for a long period of time. Why would you go through all this hassle to cook something? Well, sous viding eliminates the risk of over or undercooking and pretty much helps you achieve perfectly cooked food every time. This is extremely helpful when you have an expensive cut of meat you do not want to ruin. Maybe you need 10 perfectly cooked steaks for your “steak night” dinner party. Rather than grilling them at the same time and risking grey, overcooked meat, you can sous vide all of them to the ideal temperature ahead of time, then quickly sear before serving.

Typically, you would have to buy a separate sous vide apparatus fill a large container full of water. But with the Wolf steam oven you have the convenience of doing it all in your oven.


Time: 3 hours

Ingredients:

1 14-16 ounce cut strip steak, ideally 1 1/2 – 2 – inches thick.

1/2 teaspoon garlic powder

1 teaspoon kosher salt

Freshly ground black pepper

3 springs rosemary

3 springs thyme

1 tablespoon Grapeseed or canola oil for searing

Or you can just use your favorite steak seasoning.

Instructions:

1.   Rub the steak on all sides with garlic powder, salt, and pepper (or your favorite steak seasoning). Place the steak in a vacuum sealed back. Lightly bruise the herbs with your hands to release the oils, then place them in the bag on top of the meat. Vacuum seal bag, then place in unrepeated steam oven.

2. Select Steam Mode > 180° > then set duration for 2 ½ hours > Start°. When done, remove from steam oven and let rest in the bag for 15 minutes. Remove steak from bag and dry completely with a paper towel. Season with more salt and pepper.

3. Heat oil in a heavy bottomed skillet over high heat. When shimmering, add steak to pan and do not touch for 1-2 minutes. Flip and continue to sear on all sides of the meat. Remove steak from pan and serve.

*You can also finish your steak on a very hot outdoor grill. Sear on all sides for the same amount of time.
