CSO Cilantro Lime Rice

Serves: 6 as a side
Time: 35 minutes

Ingredients:

1 1/2 cups rice, preferably basmati

2 tablespoons butter, melted

1 3/4 cups chicken stock

1/2 teaspoons garlic powder

1 teaspoon kosher salt

1 4oz. can hatch chilies

3-4 green onions, thinly sliced

1/3 cup cilantro, finely chopped

3 tablespoons lime juice

Instructions:

1.  Using a fine mesh strainer, rinse rice under cold water until the water runs clear. Drain well.

2. Place rice in a shallow, oven proof dish and toss with melted butter. Stir in chicken stock, garlic powder, salt, and chilies (no need to drain the chilies). Place rice in an unpreheated steam oven on rack position 1 or 2. Select Gourmet > Grains > Rice > Start. Rice will take about 30 minutes.

3. When rice is done, remove from steam oven and fluff rice with a fork. Add green onions, cilantro, and lime juice and toss together. Taste for seasoning and serve.

*You can also cook the rice on Steam Mode 210° and set a time for 30 minutes. Be sure to preheat the oven.
