Chicken Salad.
Serves: 4-6
Time: 15 minutes
Ingredients:
1 roast chicken, 3 1/2 lbs, cubed into bite size pieces
1 cup finely chopped celery
1/2 cup red onion, finely chopped
1/2 cup drained capers
1/2 cup whole fat plain yogurt
3/4 cup mayonnaise
1 tablespoon white wine vinegar, or to taste
Kosher salt
Freshly ground black pepper, to taste
1 tablespoon celery leaves or parsley, finely chopped
2 tablespoons fresh dill
2 tablespoons scallions, finely chopped
8-12 slices of bread
Instructions:
1. In a large mixing bowl, add the chicken, celery, onions, and capers. In another medium bowl, combine the yogurt, mayonnaise, and vinegar. Taste for seasoning. Gently fold in the yogurt mixture to the chicken. Add salt, pepper, celery leaves or parsley, dill, and scallions. Toss to blend.
2. Use the bread to make sandwiches, garnished, if desired, with pickles, radishes, tomatoes, lettuce or any garnish of your choice.
